Jeff's mom stayed here last night. It was good to see her again.
Dinner was a pork "stew" of rosemary, onion, tomatoes, and bell pepper over a toasted rice pilaf with pea salad, carmelized onions, and fresh baked honey-wheat bread. Desert was mint-chocolate chip cookies (fresh baked).
The low point of the evening however was when my back started heading south while I was cooking. By the time I went to bed (early) I could barely stand up straight... for short periods of time. I didn't sleep well because everything hurt so much. Got up even more sore this morning so I told everyone that they'd have to scrounge breakfast and camped out with painkiller and a heating pad. I'm feeling much better now.
Jeff and his mom are off to a family reunion thing today and Jeff has his 20th High school reunion tonight. Got the house to myself so I didn't bother getting dressed. Too much trouble and a caftan is alot cooler.
Recipe: Pea Salad
-------------------
(all amounts can be varied to taste)
1/4 cup fine chopped onion or shallot
1/2 cup bacon bits (from real bacon guys - the fake stuff tasted awful in this. Best to make them yourself)
3 cups frozen tiny peas (thawed)
8 oz sour cream
salt & pepper to taste
mix everything together and refrigerate overnight before serving.
